Smokey Corn, Black Bean, & Honey Salsa

I’m not usually a salsa person. It’s not that I have anything against a delicious combination of tomatoes, onions, and other goodies, it’s just that they’re often not that… delicious. Store bought salsas are often runny, heavy with the vinegar, and straight-up boring. But this salsa… no. This salsa was a delicious revelation.

Orzo, Tomato, & Asparagus Salad

This pasta salad just might be perfection. Light, delicious, good hot or cold, and brilliant as leftovers. It comes together quickly, making it a great offering at a last minute summer potluck or picnic.

Addictive Guacamole

Craig and I had this guacamole when we were in Costa Rica. We were dining on daiquiris and tacos on the beach, listening to a fellow playing acoustic renditions of pop and rock songs and getting to know our new friends Jennifer and Grant a bit better (fellow Canadians who were staying next to us). Anyhow, we ordered some chips and guacamole as a starter, and oh my. I very quickly made the decision to have guacamole for dinner that night. It was a great decision.

Spicy Ginger, Sweet Potato, & Bean Stew

Craig’s not much for bragging, so I often end up doing it for him. So, today, I’m here to brag about this awesome stew/soup he made one winter weekend. It’s loaded with awesome things like sweet potatoes and carrots, with boatloads of ginger and garlic, which are great winter immune system boosters. I’m sure they’re more potent raw, but they taste nicer cooked.

Smokey Lentil Chili

At this time of year I’m a total sucker for chili. It helps power me through my chilly late autumn bike rides home, and it’s a great excuse to bake and eat lots of delicious homemade bread.

This lentil chili gets a great smokey kick from some alderwood smoked sea salt and my favourite Spirit of Africa seasoning, but you can feel free to use any of your favourite smokey ingredients, be it smoked paprika, bacon, or even liquid smoke. (more…)

African Chickpea & Peanut Butter Soup

My Aunt Karla was raving about this soup while I was at the cottage. I was there towards the tail end of August, so she was already starting to think about winter soup, and I heard about this soup enough times that I insisted she sent the recipe over. And so, last weekend, when I got dove head first into my autumn soup making marathon, this was the first soup I made. It’s worth all the raving.
