Come Thanksgiving, I like to have gravy like everyone else, though as a vegetarian I’m not eating the same gravy as everyone else. This is a really quick, simple vegetarian gravy that’s nice and creamy and tastes great with sweet potatoes and vegetarian stuffing. And anything else you care to pour gravy over, I suppose.
2 tbsp butter
2 tbsp all-purpose flour
1/2 cup vegetable broth, warmed
Salt & pepper
Herbs of choice
Melt the butter in a small saucepan over medium heat. Sprinkle in a little bit of the flour at a time, blending it in with a silicone spatula as you go. Once all the flour is incorporated, you should have a burbling paste. Now, a litt
le at a time, start whisking in the broth. The first addition will turn your burbling paste into what looks like a blob of playdough. This is ok. Keep adding little bits of broth, stirring as you go. Stop adding broth when you’ve reached the consistency you like in gravy. Season to taste. Serve over anything that needs gravy.
