This is one of my favourite salad dressings. Three ingredients that come together to create a delightful, tangy, maple-y dressing that is perfect on arugula and/or baby spinach. Yum.

With only three ingredients, the quality is of utmost importance. You want a light, flavourful olive oil (pomace) (USA / Canada). Something that isn’t too grassy or peppery. The white balsamic vinegar should be both sweet and sour. The maple syrup should be at least B or C grade. Nice and dark, with lots of mapley flavour.

A Perfectly Simple Salad Dressing

2 parts olive oil (pomace) (USA / Canada)
1 part white balsamic vinegar
1 part maple syrup

Combine in a lidded container. Shake to combine, and serve over fresh greens. Yummy!

If you don’t like too sweet of a dressing, feel free to tweak the balance of the balsamic vinegar and the maple syrup.
