Cream of Earl Grey Marshmallows

I love making marshmallows. The flavour combinations are endless, they come together like magic, and they never fail to impress. They’re also easier to make than you’d think, which is a major plus. These particular marshmallows are infused with Cream of Earl Grey tea, but you can make them straight-up vanilla marshmallows easily enough (or use your favourite tea instead).

Spicy Ginger, Sweet Potato, & Bean Stew

Craig’s not much for bragging, so I often end up doing it for him. So, today, I’m here to brag about this awesome stew/soup he made one winter weekend. It’s loaded with awesome things like sweet potatoes and carrots, with boatloads of ginger and garlic, which are great winter immune system boosters. I’m sure they’re more potent raw, but they taste nicer cooked.

Coconut Pancakes

These amazing coconut pancakes are rich, thick, and fluffy, with a lightly crispy exterior that will have you doubting the quality of all your previous pancake experiences. They started as a bit of an experiment. An “we’re out of milk but I still want pancakes” experiment. Craig did not have a whole lot of faith in this experiment initially, but I won him over with the test pancake. Yum.

One of the biggest downfalls of a new diet is falling back into delicious old habits, which is so easy to do when everything new you’re eating tastes awful. That’s where this awesome broccoli salad comes in. It’s healthy, it’s delicious, and it’s easily made with ingredients that are in season in the dead of a Canadian winter.

Caramelized Onion & Chévre Quiche

You might not think so, but quiche has a lot going for it. Its versatile, delicious, and pretty hard to mess up. You can make it vegetarian friendly or load it up with bacon. You can eat it hot or cold, and for any meal of the day (including brunch, which is sort of the honorary fourth meal). But, best of all, the leftovers are so easy. And if you know me and leftovers, you know that I love them. Because, you see, without leftovers, I have beer and sweet potato fries for dinner far more than I should.
