Grilled Black Bean & Corn Calzone

As far as easy meals go, this one might just strike the perfect balance between easy, versatile, quick, and delicious. If you’ve got the ingredients on hand it comes together about as quickly as a sandwich, and then just requires some unsupervised grilling time.

Spicy Arugula, Tomato, and Mozarella Grilled Pizza

Summer hits, I want pizza, and I want in on the BBQ. It’s inevitable, and I am totally ok with that. This pizza was born out of warm-weather induced necessity after a trip to my favourite fruit & veg stand. I had fresh BC arugula, a new (used) KitchenAid stand mixer to test out, and some beautiful squishy pizza mozzarella.

My Favourite No-Recipe Pizza Dough

I am not overly good at following recipes. Sure, I can read them through and I’m obviously capable of following directions (most of the time…). I, however, tend to think I can improve on things without trying them the original way first (the bonus of this method is that I never know if my changes were for the better or for the worst, so I can continue on my merry, and potentially oblivious way as long as everything tastes nice and nothing explodes).


This pizza dough recipe began with my love of the Artisan Bread in 5 Minutes a Day books (they’re brilliant), and then merged with my frequent inability to wait 2–5 hours for my pizza dough to be ready (so, yes, you will have to knead it). The end result is an easy, flavorful dough that is ready to use in about an hour. Awesome! And, yes, there are technically measurements here, but there aren’t many and I think they’re pretty easy to remember. (more…)

Artichoke & Sun Dried Tomato Calzones

Whenever I make pizza I tend to go on a bit of a pizza spree. Maybe it’s because the dough is already made and I already have the ingredients, maybe it’s because I’ve just been reminded of how delicious pizza is, or maybe it’s that one delicious pizza begets another (and another… and another). Anyhow, suffice it to say that if I make pizza once in a week, that will quickly balloon to three or four times (I’m ok with it).

BBQ Pizza

I adore pizza—while it’s great in the winter, I feel like it really shines in the summer when you can enjoy it with fresh produce, out in the sunshine with a nice, cold pint. Unfortunately I don’t have a pizza oven, so the other great thing about summertime is being able to cook pizza right on the BBQ. It’s easier than you think, and gives you a fantastic crust (assuming you don’t torch it, of course).
