Grilled Black Bean & Corn Calzone

As far as easy meals go, this one might just strike the perfect balance between easy, versatile, quick, and delicious. If you’ve got the ingredients on hand it comes together about as quickly as a sandwich, and then just requires some unsupervised grilling time.

Veggie Overload Panini

When Craig and I were in Costa Rica we took a day to quad across to peninsula and explore. After bumping along kilometers of rolling, bumpy rainforest roads and walking out across the tide flats to a small island on a cemetery we stopped for lunch at a rather unassuming looking bakery. I ordered one of the few vegetarian options—a veggie pita. The English translation of the description was a bit lackluster (basically a long list of veg plus a pita) and my hopes weren’t that high, but then it arrived. And… oh my.



Hummus, Avocado, and Sprout Sandwich

We went to Golden, BC a few weeks ago, and it was fantastic. So much fun! We camped, climbed, and went mountain biking. I bought copious amounts of raw honey from a great roadside shop (more on that later), got some much needed sunshine, and enjoyed the stunning scenery. We also enjoyed some delicious camping and road food, and while everything was delicious (as it tends to be when you’re camping and famished), this sandwich really stuck out.

BBQed Veggie & Halloumi Sandwich

After I invented this sandwich I had it for dinner 3 nights in a row. Yum. It’s loaded with veggies and all kinds of great vegetarian fats and proteins, it’s messy to eat, and it is delicious.


Oddly enough, I love the messiness of this sandwich. It drips, slips, and is perfect with sweet potato fries on a sunny patio with a beer. Squeaky halloumi, creamy avocado, goat cheese, and a stack of all the best roasted vegetables. Utterly fantastic.


Open Faced Chévre & Pesto Sandwiches

These days I feel like I’m becoming a maven of really easy dinners. I blame it on the season change. I’m currently in the throes of what I call the winter fidgets—not quite the winter blues, but still really annoying. I just feel like I can’t wait any longer for spring, and it just keeps teasing me so cruelly. One day it’s 16°C, and the next day it’s snowing.

Roasted Vegetable Burritos

Lately I seem to have a weakness for things wrapped in tortillas. Food things, of course. Tortillas just make everything convenient. You can wrap up all sorts of things that would never hold together in a sandwich and you’re off to the races. And, you can make two weeks worth of lunches in almost no extra time, which I consider to be a major bonus.

These roasted vegetable and re-fried bean burritos are awesome. Full of all kinds of vegetables, tasty beans, and a sprinkling of cheese, they make a great lunch with a dollop of sour cream.
