You could also call this Chiptole Aioli. If you’re feeling pretentious or you just graduated from culinary school. Or if you’re trying to convince someone to try it without telling them what they’re really eating. But I’m ok with just calling it Chipotle Garlic Mayo did, ’cause that’s what this is.

It’s drop dead simple and amazing with roasted sweet potato fries. Just three ingredients; mayo, garlic powder (or pureed fresh garlic), and minced chipotle en adobo. You’ll want about 2 tbsp of mayo, a sprinkle of garlic powder, and enough chipotle to make things interestesting for you. I think I used about ¾ tsp, but I am a bit of a pansy.

Just mix it together in a little dish with a little spoon and voila. Tastiness.
