So, a few nights ago I found myself with a big batch of freshly made pizza crust dough, and a desire for pizza. Perfect, I thought, and I set off to make pizza.


That, unfortunately, is where the perfection stopped. I opened up the fridge to select my toppings. Spinach? Slimy. Broccoli? Moldy. Mushrooms or peppers? Not a one. So I started scavenging. A jar of pesto from the pantry. Some goat cheese. Some mozzarella silly-strings a visiting small child left behind some months ago. Sweet potato, frozen sun-dried tomatoes… and a can of artichokes. I decided against canned corn or mandarins, though they were available.

Amazingly enough, everything came together beautifully. I finished the pizza off with an herbed balsamic reduction, and it was really, really good. I’d highly recommend feeding it to any vegetarian friends you might have, or just eating it yourself. Omnomnom.

Is this the pizza you were making while we were talking on the phone?
I really didn’t have high hopes for it.
I still say you should have used the canned mandarins.
I think so… probably. Ha. I don’t make too many pizzas like this one!
