A friend’s mom introduced me to this great salad/dish/thing. It’s almost stupidly easy, totally customizable, and thoroughly delicious. And since it’s great hot or cold, it makes perfect leftovers for packed lunches or rushed dinners.

It’s a great combination of pasta, all the vegetables you want and like, and some beans or lentils for protein. Topped with the salad dressing of your choice and some shredded cheese, it’s totally delicious.

Hot Pasta Salad

2 cups dry pasta of choice, whole wheat or otherwise
2 cups assorted chopped vegetables; broccoli, bell peppers, green beans, etc.
1 can beans of your choice

Salad dressing of your choice, to serve
Shredded cheese of your choice, to serve

Boil a large pot of salted water. Add the pasta. Add the vegetables with about four minutes left, keeping in mind the density of the vegetables. Add carrots a bit earlier, frozen peas or corn later.

Drain everything including the beans, and toss together. Serve with the dressing and the cheese of your choice. Devour!
