I use glass prep cups a lot in my work; they’re great for mixing up smaller batches of products, and I also use them a lot in my videos for mise en place.
The prep cups I have hold approximately 100mL (3.3fl oz). I prefer glass over metal and silicone due to the heat capacity of glass—it heats up slowly and stays warm much longer than metal or silicone, giving me plenty of time to stir and blend mixtures before they solidify. The weight of the glass is also nice in a water bath—I find silicone bowls tend to float around precariously.
I’d recommend getting a set of half a dozen or more prep cups; they’re really useful, and you will eventually break ’em, so it’s nice to have extra from the get-go.
