Spiced Basmati Rice is so, so easy—it might add two minutes to your rice prep time—but the flavor payback is huge. You end up with beautifully flavorful rice that’s perfect with all kinds of Indian food, or even just as a more interesting side dish.

You start by dry toasting some spices to really bring out their flavor. I like mustard, cumin, and sometimes coriander seeds. Lightly toast them until they’re fragrant.

Then add your rinsed rice, twice as much water, and a spoonful or two of ghee. After that it’s business as usual. Beautiful.
Spiced Basmati Rice
1 cup basmati rice, rinsed
2 cups water1 tsp mustard seeds
1 tsp cumin seeds
½ tsp coriander seeds (optional)1 tbsp of ghee
Heat a medium saucepan over medium heat. Add the spices and toast, agitating the pan frequently, until fragrant.
Add the rice, water, and ghee. Cover the pot and bring to a boil. Reduce heat to low and cook for 20 minutes. Remove the pan from the heat and let sit for 10 minutes before serving with tasty Indian food!
