I love pizza. Yup. Mmmm, pizza. I’ve been making up a big batch of bread dough and having pizza. Lots and lots of pizza. And believe it or not, I haven’t shared all of them with you. Just the best ones.

This one is quite cheesy. But beautifully cheesy, not overly greasy, cheap pizza from the corner store greasy. Mozzarella, chèvre, and ricotta. With roasted bell pepper, which pairs beautifully with the mild sweetness of ricotta. A base of pesto adds a pop of flavour. Yumyumyum.

Three Cheese & Roasted Bell Pepper Pizza

1 softball sized ball of pizza dough

1 tbsp basil pesto
1 roasted bell pepper
¼ cup ricotta cheese
2 tbsp chèvre, crumbled
10 slices pizza mozzarella

Flour, for dusting

Preheat your oven to 400°F. Dust your dough ball with flour and gently stretch it out to pizza size. Place it on a parchment lined baking sheet.

Spread the pesto on the dough, and top with bell pepper, crumbled chèvre, spoonfuls of ricotta, and slices of mozzarella.

Bake for 20 minutes until the cheese is all golden and delicious. Let cool a bit, and enjoy!
