My brother turned twenty this week, so about two weeks ago I sent him a massive list of potential cakes from websites like Smitten Kitchen, Fine Cooking, and Epicurious so he could choose the bestest cake ever, and then I could spend three days in the kitchen making it.

In the end, he chose the chocolate cake from my cookbook, Maple Syrup on Everything. The cake is a beauty, if I do say so myself. Three layers, each of which are separated with a whipped white chocolate ganache frosting. Then, the entire cake is wrapped in a mocha milk chocolate frosting, and topped with a dark chocolate version of the same, said, utterly delicious frosting. Good choice, brother. Being a cake connoisseur clearly runs in the family.

I got the top to look like that using icing in a piping bag with a closed star icing tip. I used different photos for the recipe since I didn’t include the frosting recipe and that’s all you see here—this one is a whipped chocolate ganache recipe, and it’s just divine (though rather hard on your hand mixer—I burnt one out with it :/).
