This delicious porridge comes together in a flash and is part healthy, whole-grain brekkie, and part apple pie. It’s a great breakfast for a chilly weekend morning, and it’s a brilliant way to use up any apples that are starting to go a bit wrinkly on you.

Toasting the oats in a bit of butter really brings out their delicious oat-y flavour. Then, simmer them with apple, cranberries, cinnamon, and vanilla to infuse everything with spiced apple goodness. Feel free to add a pinch of cloves and a dash of nutmeg if you’re feeling daring.

Serve with a dollop of delicious homemade caramel cream sauce and a drizzle of milk or cream, and enjoy starting your day with a bit of dessert. Yum!

Apple & Cranberry Caramel Porridge
1 tbsp butter
1 cup whole rolled oats2½ cups water
1 large apple, cored & diced
1/3 cup dried cranberries
½ tsp ground cinnamon
½ tsp vanilla extractCaramel sauce
Heat a heavy bottomed saucepan over medium heat. Melt the butter in it and toast the oats, stirring, until they are lightly browned and fragrant.
Add the water, apple, cranberries, cinnamon, and vanilla. Simmer until the water is absorbed at the oats are cooked through, about ten minutes.
To serve, divide between two bowls and top with a dollop of caramel sauce & some milk (if you like milky porridge).

Dulche de Leche would probably be the next closest thing, and after that you’re basically just looking at something sweet (maple syrup would be my first choice). But caramel sauce is SUPER easy to make and only needs 2 ingredients (sugar and cream), so I would definitely recommend giving that a go 🙂
